One Pot Jerk Chicken and Rice Meal, This recipe is the perfect weeknight dinner for your entire family. In fact this quick and easy recipe is loaded with lots of chicken, rice and vegetables which is ready in under 45 minutes!
Now, some ingredient are always optional, but as long as you use these ingredients, i.e. mild jerk marinade sauce, all vegetables and powder seasoning you will have a delicious one pot dinner.
What is One Pot Meal?
One pot meal is when everything is prepared in that one pot and all the flavors combine together for a delicious meal.
Which pot should I use for this meal?
While one pot meals can be done on stove top or in the oven. I always suggest using a oven safe pan e.g Skillet and Dutch Oven are my favorite.
Can it be make ahead of time?
Of course! This recipe can be made ahead of time for weekly meal prep dinner and store in the refrigerator.
What ingredients you will need?
Well this recipe uses simple ingredients that you can find at your local grocery store.
Meat – I used bone in chicken thighs but you can use boneless chicken thighs and drumsticks.
Jerk marinate –Walkerswood Mlid Jerk Seasoning is currently my favorite.
Powder seasoning – White pepper, black pepper, complete season, garlic season, onion powder and salt to taste.
Herbs & spice – Bay leaves or all spice berries and fresh thyme.
Vegetable – Chopped sweet onion, red bell peppers, green bell peppers, yellow bell peppers, jalapeño or scotch bonnet and green onion.
Water – I used water to make this recipe. But you can use any liquid of choice: vegetable broth or chicken stock.
Rice – Jasmine rice is my preferred choice. However any rice can be use for this recipe.
Condiments – Unsalted butter and olive oil.

How to make Jerk Chicken and Rice One Pot?
Step 1
Preheat oven to 400 Degrees Fahrenheit. Wash, clean and seasoned chicken thighs then rub chicken thighs to make sure it is coated well with seasoning.
Step 2
Using a large skillet or oven safe pan, add oil and turn heat to medium-high pan-fry chicken thighs for 2-3 minutes on each side. Remove and set aside on a plate.
Step 3
In the same pan add vegetable i.e onions, bell pepper, scotch bonnet pepper and saute for 1-2 minutes or until fragrant.
Step 4
Next, Add wash rice mix to get all the seasoning observed into the rice then add 2 tbsp jerk marinate, 1 tbsp complete seasoning, 1 tbsp butter stir then add 3 cups water, thyme, bay leaves and lay chicken over bed of rice. Cover with a tight lid or aluminum foil bake for 40-45 minutes or until all liquids absorbed into the rice.
Step 5
Remove cover and broil on low for 3-5 minutes to get desire chicken color then remove from oven fluff with fork then drizzle with sauce. Garnish serve warm and enjoy!

Ingredients
5-6 Bone in Chicken Thighs
4-6 Tablespoon Jerk marinate
1 Teaspoon White Pepper
1 Teaspoon Black Pepper
2 Tablespoon Complete Season
1 Teaspoon Garlic Season
1 Teaspoon Onion Powder
1/2 Cup chopped sweet onion
1/2 Cup Red Bell Peppers
1/2 Cup Green Bell Peppers
1/2 Cup Yellow Bell peppers
1 Chopped jalapeño or scotch bonnet
3 Cups water
1 1/2 Cup Jasmine rice
1 Tablespoon unsalted butter
3-5 Spring Fresh thyme
1 Tablespoon olive oil
Bay leaves or all spice berries
Salt to taste
Green onion (garnish)
Sauce
1 Tablespoon jerk season marinate
1 Tablespoon Water
1 Tablespoon BBQ sauce
1 Tablespoon Ketchup
Instructions
