So here’s the thing, even if you don’t consider yourself a pro in the kitchen, you can make tortillas. Seriously, it’s not complicated at all.

When I started following the keto diet, back in the stone ages, I pretty much needed a map to navigate my kitchen.
In other words, I was about as far from a cooking queen as one can get.

And you know what?

I’m still not the type of gal who passionately cooks on the daily, but eating? Well, eating has never been an issue.

Like most folks, I’m obsessed with Mexican food.

Chips and guac, tacos, burritos, nachos – they all speak to me in one way or another. But, after I started following the keto diet and lost 148 pounds, I started paying more attention to the ingredients in my favorite foods—specifically, carbs.

And whoa – when I realized how many were in one traditional tortilla, I felt gut-punched.

Are Tortillas Keto-Friendly?

Chances are you haven’t taken a look at the tiny little labels on your go-to tortillas, but I have, and it’s not pretty.

Corn tortillas have around 12 net carbs each – and wheat tortillas, which sound like they should be healthier are even worse coming in at 14 net carbs each.

But there is good news. You can make adjustments to the ingredients that drive up the carbs and come out sitting pretty on the other side with a keto-friendly, healthier Almond Flour Tortilla Recipe.

Ingredients

We’re combining two popular low carb flours here – blanched almond flour and coconut flour. Blanched almond flour works way better than almond meal, but it is on the costly side, so we’re mixing in some coconut flour to make it stretch and for flavor

You’ll also need xanthan gum to bind and thicken – and this one is truly a non-negotiable ingredient. I can’t find anything else that thickens and binds (and keeps it low carb) like xanthan gum.

We’re also going to add a tiny bit of baking powder – if you’re gluten-free, be sure to use a compliant brand.

Oh, and one more key ingredient is apple cider vinegar. We’re using a little ACV to help the dough develop. If you don’t have any, do not worry – it is not a deal-breaker, but it helps.

What You Need To Make Tortillas

Typically special equipment upsets me.

I don’t feel like it’s fair when bloggers tell you that you NEED to have a $400 KitchenAid mixer to create the most fabulous recipe for XYZ when you can get the job done with a hand mixer or an old school mixing bowl and a spoon.

But I’ve found when it comes to baking with almond flour consistency counts—properly combining the ingredients matters. So I do highly recommend you use a food processor.

You’ll also need a rolling pin – but if you don’t have one, you can use oh I don’t know a can of soup or a drumstick or anything round that’ll help you flatten out the dough.

Oh, and you need wax paper too.

Description

The best homemade keto almond flour tortilla recipe! Make delicious low carb, gluten-free tortillas with 6 simple ingredients, 2.8 net carbs and 3 WW points!

Ingredients

3/4 cup + 1 tablespoon (98 grams) Blanched Almond Flour

4 tablespoons (28 grams) Coconut Flour

1 Egg (at room temperature)

1 teaspoon (4 grams) Xanthan Gum

1 teaspoon Baking Powder

1/2 teaspoon Kosher Salt

2 teaspoons Apple Cider Vinegar

2 to 4 tablespoons warm water

Instructions

  • Combine the almond flour, coconut flour, xanthan gum, baking powder, salt, egg and 2 tablespoons of water, and 2 teaspoons apple cider vinegar in a food processor and press pulse.
  • If the dough appears dry, you can add in water – a tablespoon at a time and pulse until it gets a dough-like consistency
  • Wrap dough in saran wrap and place it in the refrigerator for at least an hour or up to four days. Gluten-free flours tend to perform better after they chill.
  • When you are ready to roll – literally – get out your wax paper and separate the dough into 8 sections. Then roll each part into a ball and then use a rolling pin to flatten. Separate each with parchment paper, so they don’t stick.
  • Heat a cast-iron or nonstick skillet to medium and cook each tortilla for around 45 seconds per side.

Notes

  • You can store the dough (wrapped in saran wrap) in the refrigerator for up to 4 days. Cooked tortillas need to be stored in an airtight container or ziplock bag in the fridge.
  • To Freeze: Place tortillas in a ziplock bag or airtight container. Use wax paper to separate each one, so they don’t stick together! Freeze for up to 3 months.

FAQs

Why can't you use baking powder with almond flour? ›

Since baking powder contains baking soda, baking powder cannot be used in almond flour baking. Instead, eggs (or applesauce or bananas) can be used as the leavening agent to help baked goods rise and achieve a light and fluffy texture.

How many carbs are in almond flour tortillas? ›

Siete Almond Flour Tortillas (2 tortillas) contains 20g total carbs, 16g net carbs, 11g fat, 6g protein, and 200 calories.

Can gluten-free flour be a substitute for almond flour? ›

This premade blend of multiple gluten-free flowers can be a great substitute for almond flour. It typically mixes rice flour, potato starch and tapioca starch, with different brands containing different ratios. Use in a 1:1 ratio as a substitute for almond flour.

What are the disadvantages of almond flour? ›

The downside of using almond flour over wheat flour is that baked goods tend to be more flat and dense. This is because the gluten in wheat flour helps dough stretch and traps more air, which helps baked goods rise.

What can I use to bind almond flour? ›

The Basic Baking Guidelines

Our chef prefers to add a little xanthan gum or cornstarch to the almond flour to help with the texture, though it is not entirely necessary to do so. Almond flour is pretty forgiving in that regard. Some use arrowroot powder to achieve a similar effect in their bread recipes.

Is almond flour truly keto? ›

Almond flour is a 100% keto-approved baking flour. It is also the most widely used keto flour on shelves. However, what it lacks in carbs, it makes up for in calories. Though almond flour is significantly higher in calories than many other flours, it also contains considerable amounts of protein and fiber.

Can diabetics eat almond flour tortillas? ›

Almond flour is a low glycemic index food. Compared to wheat flour, almond flour has fewer sugars and carbohydrates. Switching to almond flour can help people with diabetes manage their blood sugar levels more effectively.

What is the closest gluten free flour to all-purpose flour? ›

In contrast to tapioca flour, which is made from a starchy liquid extracted from the cassava root, cassava flour is made by grating and drying the whole root. This flour is gluten-, grain- and nut-free. It's most similar to white flour and can easily be used in recipes calling for all-purpose flour.

Is almond flour gluten-free and grain free? ›

Almond flour is one of the more well-known grain-free and gluten-free flours and can be used interchangeably with wheat flour, whole wheat flour, or white flour in a 1:1 ratio.

What flour is closest to almond flour? ›

You can make oat flour to use as almond flour substitutes by grinding rolled oats in your food processor. The texture is similar to almond meal but the flavour will be slightly 'oaty' but I quite like it! Especially in muffins.

How do you make gluten-free tortillas not fall apart? ›

Only cook the tortillas for a very short time (around 1 minute total if the pan is hot enough), so watch for when the tortilla starts to bubble with air, then flip to the other side to cook for a few seconds only – cook less than you would think you need.

Why do my flour tortillas get hard the next day? ›

Adding too much flour to knead or to roll out the tortillas will also create hard and dry tortillas. Do not overcook. It will dry out the tortillas and create tough tortillas. Thinner tortillas require less time to cook than thicker tortillas.

Will almond flour rise with baking powder? ›

Yeast doesn't really work well with low-carb flours like almond flour, so it's pointless to add. Egg, baking powder, and baking soda make almond flour rise, though.

Can I use baking soda when baking with almond flour? ›

Since almond flour can't trap air like gluten-containing flours, you'll often need a little extra help from leavening agents to ensure your baked goods are light and fluffy. Baking powder, baking soda, and whipped egg whites can all provide lift, but they must be used thoughtfully.

What happens if you bake almond flour? ›

Almond flour adds flavor in the form of very mild sweetness (not enough to negatively affect savory recipes), and a certain richness. Baking with almond flour extends the shelf life of baked goods by adding fat, which helps retain moisture.

Why didn't my almond flour bread rise? ›

So, if you've ever made an almond flour recipe and had issues with the final product holding together, leaching out the oils or butter, or not rising properly and holding its shape, a likely culprit is that you are using the coarser almond meal, instead of almond flour.
