I feel like maybe I'm supposed to be ashamed that this happened one Thursday night when I was home alone....by which I mean going to the market strictly for marshmallows in a variety of sizes...and then eating most of them...in malllow-on-mallow, meta-s'more fashion...but I'm just not. What You'll Need

Ingredients
  • 4 tablespoonsbutter (half a stick)
  • 4 cupsmini marshmallows, almost one full 10-ounce bag (snack on the rest, resistance is futile)
  • 1 teaspooncinnamon
  • 1/2 teaspoonnutmeg
  • 6 cupspuffed rice cereal (do your thang if you wanna use that expen$ive bougie brown rice stuff, I judge you not)
  • 10 regular-sized marshmallows
  • 2 cupssemi-sweet chocolate chips
Directions
  1. Melt butter in a pot over medium heat, and then add mini marshmallows, cinnamon, and nutmeg, stirring with a heat-proof spatula until the entire mixture is melted.
  2. Remove pot from heat and add cereal, folding in until the whole mess is coated and gooey and sticky.
  3. Dump contents of pot into a rimmed baking sheet coated with cooking spray. Mine is 15 x 10 inches, and I used a baking sheet rather than a dish because I wanted thinner krispies treats on either side of my s’more so it was still possible to fit the whole thing vertically in my mouth. I have priorities. Flatten into one layer with your spatula, and then stick the dish into the freezer for at least 15 minutes.
  4. Remove baking sheet from freezer and cut into 20 rectangles. Return to freezer for 5 minutes.
  5. Using a skewer or similarly longish utensil, roast the big marshmallows over your stove burner, or a campfire, or a candle, or whatever you have nearest that is engulfed in flames. Smash roasted mallow between two krispies treats, pressing together to form a sandwich. Repeat with remaining mallows and treats.
  6. Heat chocolate in the microwave, stopping to stir every 15 seconds, until melty and smooth. Dip krispies sandwiches halfway into the chocolate, and then place onto a sheet of wax paper. Stick sandwiches into the fridge to speed along the hardening process. Try to save one for your boyfriend but just in case maybe don’t tell him you made them so after you’ve eaten them all, he is none the wiser.

Forgive me, a guy, for venturing into the ladies "party," but I have a suggestion you might enjoy? Was a Boy Scout, long, long ago! Have eaten lots and lot of S'mores along the way.
Just down the road we have a health food store, called Mana Mills in Montlake Terrace WA., that has a couple of grinders they use for nut butters, one for peanut butter and the other for making almond butter, no additives just the ground nuts, a bit dryer than the glop you buy in a jar, but oh, so much better tasting, sweeter a lot more nut flavor! (There is enough oil in the nuts that the nut butter does hold together,but, because it is dryer it does not squeeze out of those traditional Graham cracker/marshmallow melted chocolate S'mores!) Or for that matter would it out of your seriously wonderful sounding, (have not tried these yet), Rice Krispie Treat S'mores! Just thinking, you might want to try
adding a layer of Peanut Butter to one side of your creation, before assembling the Sandwiches. That is of course, for a little variety after you've eaten several batches??

These turned out deliciously, but I think I'd heed the advice of the recipe and use a larger pan that the 9x13, these were monster sandwiches! I made 24 squares and made nine sandwiches and six "open face" sandwiches where I just placed a marshmallow on top and drizzled with the chocolate. Both ways were tasty and well received by my friends. I think next time I'd go a little lighter on the spices, maybe .75 tsp cinnamon and .25 tsp nutmeg.

Made these with my friend tonight for a study break! Instead of cutting them into individual rectangles first, we covered half of the Krispies batch with the burnt marshmallows, cut the slab in half, made a huge sandwich, pressed it down, then cut into individual sandwiches, then dipped into melted chocolate. They were the bomb.

They look divine! Thinking of making them ahead before taking them on a road trip with me to visit some friends about 4 hours away. Any advice on:
1. How long they store for?
2. Can/should I freeze them days in advance and have them defrost during the drive (if anyone had that sort of self control to report back, congrats :P)

Could you make these into more of a bar by omitting the regular sized marshmallows, upping the miniatures, and the top the bars with the chocolate (or make a ganache/frosting)? I'm thinking about taking these to a party and the sandwiches seem a little involved for a bigger group. Thanks in advance!

absolutely. i feel like adding more marshmallows to the regular rice krispie treat model would make for a gooeyer (gooier? gooey-er) bar, so maybe stick with the normal amount and then top with the melted chocolate. if you want more mallows, maybe top the chocolate with a sprinkling before it hardens!
